A boozy vanilla panna cotta, gingerbread sponge and white chocolate Amarula mousse give the classic Christmas trifle a very grown-up twist!

There is nothing Amarula doesn’t touch that isn’t absolutely DELICIOUS! I’m a massive fan and have turned my favourite drink into everything from these Chocolate Amarula Magnum Ice Creams, a malva pudding with Amarula sauce, or this Amarula ice cream cake! So when they sent me a box of mystery ingredients (golden syrup, caster sugar, cream and the new Amarula Vanilla Spice, I had a gajillion recipes I wanted to create with them! 

Amarula Vanilla Spice is similar to the classic except it’s infused with Madagascan vanilla beans and fresh ginger. It was these flavours that got me into the Christmas erm, spirit (sorry, not sorry) and it’s not the festive season without a trifle! Instead of the usual jelly layer, I’ve made a creamy panna cotta loaded with Amarula Vanilla Spice and extra vanilla to enhance the flavour. My favourite spicy gingerbread sponge cake is on top (I may or may not have added a few extra glugs of Amarula on top of it) before it gets a thick layer of Amarula white chocolate mousse. The mousse only has THREE ingredients and it will change your LIFE! The best part of all (I know, can it get any better?) is that this dessert can be made the day before so on Christmas day you can just relax!

Ingredients
  1. Amarula panna cotta
  2. 4g (2) sheets gelatine
  3. 65g (1 cup) plain double cream yoghurt
  4. 125ml (½ cup) pouring cream
  5. 125ml (½ cup) Amarula Vanilla Spice
  6. 50g (¼ cup) caster sugar
  7. Gingerbread sponge
  8. 85g salted butter
  9. 85g molasses or date syrup
  10. 85g golden syrup
  11. 90g (130ml) dark muscovado sugar
  12. 215g (1 ½ cups) cake flour
  13. 1/4 tsp salt
  14. 1 ¼ tsp bicarbonate of soda
  15. 1 tsp ground ginger
  16. ¼ tsp ground cinnamon
  17. 1 tsp cocoa powder
  18. 1 large egg, beaten
  19. 180ml (¾ cups) full cream milk
  20. 80ml (⅓ cup) Amarula Vanilla Spice, for brushing
  21. Amarula White Chocolate Mousse
  22. 500ml (2 cups) whipping cream
  23. 370g (2 cups) ) The Kate Tin White Baking Chocolate, melted and cooled
  24. 125ml (½ cup) Vanilla Spiced Amarula
  25. Ginger biscuits, to decorate
Instructions
  1. To make the panna cotta, soak the gelatine in cold water until soft and translucent.
  2. In a medium bowl, combine the yoghurt, ¼ cup of cream and Amarula together.
  3. Place the ¼ cup of the cream and the sugar in a microwave-safe bowl and gently heat up to hand hot temperature.
  4. Squeeze the liquid out of the gelatine sheets and stir in the hot cream mixture.
  5. Pour the warm cream mixture into the yoghurt mixture, passing it through a sieve in case any gelatine hasn’t dissolved.
  6. Pour into the base of a medium-sized 2L trifle dish and set in the fridge for at least 2 hours.
  7. To make the gingerbread sponge, preheat the oven to 180° C (or 160C fan-forced).
  8. Grease and line the base of 2 x 22cm round cake tins (make sure they are as wide as your trifle dish).
  9. In a saucepan, melt the butter, molasses, syrup and sugar over medium heat until the sugar has dissolved completely. Remove from the heat and allow to cool.
  10. In a separate bowl, combine the dry ingredients.
  11. Whisk the eggs and milk into the cooled molasses mixture then pour into the dry ingredients and whisk to combine. Divide the batter between the lined cake tins and bake in for 35-40 minutes or until a skewer inserted into the middle comes out clean.
  12. Allow to cool completely then level off the cake and cut it into discs the same width as your trifle dish.
  13. To make the mousse, whisk the cream to soft peak stage before folding in the melted chocolate along with the Amarula Vanilla Spice Liqueur, until just combined.
  14. To assemble, place a layer of cake over the set panna cotta.
  15. Top with white chocolate mousse and another layer of cake.
  16. Finish off the trifle by dolloping the rest of the mousse over and decorating with Christmas tree cookies. Dust with icing sugar and leave to set in the fridge until ready to serve.

If you’re a long-time reader of The Kate Tin, you’ll know that the very first post I ever wrote was called ‘Beetroot and Pressure Cookers’. It was a childhood memory I shared of my grandmother and The Great Pressure Cooker Explosion Of 1996. I was 8 years old and my grandfather had planted WAY too much beetroot that year. In an effort to save us all from eating beetroot every day for the next decade, my grandmother decided to bottle them – using her prehistoric pressure cooker. Long story short, the decrepit thing exploded and flung bright purple juice everywhere!

Ever since then, I’ve had a morbid fear of pressure cookers. That is until I was introduced to the Instant Pot. Its got a gazillion safety functions and super silent pressure building so I no longer live in fear of dying at the hands of a vegetable! 

While most people play around with cooking beef stews, soups and rice dishes when they first get their Instant Pot, I obviously went straight for pudding! Did you know your Instant Pot can make desserts too?! I’ve successfully made a velvety smooth chocolate cheesecake in it, made my own tinned caramel in minutes and now I’ve created a deliciously moist malva pudding! It’s not just a pressure cooker, though. It cooks rice in 4 minutes flat, you can make yoghurt, I’ve even used it as a bain marie to melt chocolate! Have you experimented with yours? Ingredients
  1. PUDDING
  2. 340g (375ml or 1 ½ cups) white sugar
  3. 295g (500ml or 2 cups) self-raising flour
  4. 10ml (2 tsp) bicarbonate of soda
  5. 2 large eggs, whisked
  6. 5ml (1 tsp) white vinegar
  7. 15ml (1 tbsp) smooth apricot jam
  8. 2.5ml (½ tsp) salt
  9. 250ml (1 cup) milk
  10. SAUCE
  11. 1 x 380g tin evaporated milk
  12. 20g salted butter
  13. 250ml (1 cup) white sugar
  14. 80ml Amarula or milk
  15. 1 tsp vanilla extract
Instructions
  1. In a large bowl, whisk together the dry ingredients. Add the wet ingredients and whisk to form a thick batter.
  2. Grease an 18cm bundt tin - silicone or metal - but it needs to fit inside the Instant Pot.
  3. Pour the batter into the bundt tin filling it ¾ of the way to the top.
  4. Place the Instant Pot rack inside the inner pot of the Instant pot and add 2 cups water. Place the pudding on top.
  5. Select Manual and cook the pudding on high pressure for 40 minutes. Allow the pressure to release naturally for ten minutes, then release the pressure manually. Remove from the Instant Pot (wrap in foil to keep warm).
  6. Next prepare the sauce. Pour the water out of the Instant Pot, then add the evaporated milk, butter and sugar. Set the Instant Pot to a normal simmer by pressing the ‘saute’ button twice. Simmer for 15 minutes. Stir in the Amarula and vanilla.
  7. Unwrap the foil from the pudding (it should still be hot) and immediately pour the sauce over to soak completely.
  8. Serve with ice cream or custard.

Chocolate Amarula Ice Cream Lollies

My childhood memories are filled with late-night trips to the shops to buy 4 x Magnum ice creams; white chocolate for my mom, mint crisp for my dad, almond for my sister, and plain for me. The fact that we lived on a farm 10km away from the closest corner shop was not a relevant factor when a craving struck at 8pm after dinner on a Friday night. And so my dad would get in the car and drive to make the women in his life happy (relationship goals, I tell you!). I don’t think there is a South African alive who doesn’t have an extreme soft spot for a Magnum ice cream, so I thought I’d have some fun and create a grown-up version of one of my favourite childhood treats; loaded with Amarula! I can’t really decide what the best part of this lolly is; is it the ridiculously rich and creamy no-churn ice cream in the middle? Or the homemade chocolate ice cap sauce coating that cracks when bite into it? Either parts will change your life.

Makes 6-8

 

600 ml double cream

1 tsp vanilla

3 tbsp Amarula (optional)

1 x tin (397g) sweetened condensed milk

200ml cream, whipped

 

Dark Chocolate Dip (Ice Cap)

200g The Kate Tin Dark Baking Chocolate drops (click to shop)

160g odourless coconut oil

 

50g milk chocolate, melted, to decorate (optional)

 

To make the ice cream, whisk the double cream, vanilla, Amarula and condensed milk together until smooth and thickened slightly. Fold in the whipped cream then pour into lolly moulds. Insert wooden popsicle sticks and freeze for about 4 hours or until firm. Make the dip by melting the dark chocolate and coconut oil in a bowl of a saucepan of gently simmering water until melted and smooth. Allow to cool slightly then pour into a drinking glass or jug (to allow for easy dipping). Dip the ice cream mould briefly in hot water to remove the lollies then dip into the melted chocolate. Place on a tray lined with baking paper, drizzle with the melted milk chocolate and quickly put them back in the freezer until firm.

 

 

 

TIP Freeze a baking tray to pop the dipped lollies onto – this will stop them from melting fast on a hot day!
