Preheat the oven to 180 degrees celsius, gas mark 4. Line 2 x standard baking sheets with baking paper and set aside.
In a large bowl, mix together the flour, butter, ground hazelnuts and icing sugar. Rub together until the mixture resembles coarse breadcrumbs. Add the orange blossom water gradually with the tips of the fingers to form a soft dough.
Divide the dough into 30g balls, refrigerate for 30 minutes.
For the stuffing, mix all the ingredients together. Divide into balls 12g each. Shape each into a sausage about 3cm long.
Remove the dough from the refrigerator and roll each out to 5mm thick into an oval shape. Place the filling in the centre and fold the dough around it so it completely covers the filling. Shape into crescents. Arrange on a lined baking tray and bake in the preheated oven for 15-20 minutes or until just turning golden brown. Allow to cool.
Make the syrup by mixing the water, orange blossom and sugar together. Dip each tcharek into the syrup and then coat in the icing sugar. Dust with gold dust, if desired.

Semifreddo is somewhere between ice cream and mousse. Literally meaning ‘semi-frozen’ it’s the best of both worlds! This version has a light caramel flavour with layers of homemade coconut biscuits in between.

Unless of course, I tell you about the smooth and creamy ice cream, or the layers of crunchy coconut biscuits in between – oh and then there’s the hazelnut praline on top and the waterfall of demerara sauce that you’ll want to fill a bathtub with!
If you’ve been following my Natura Sugars series, you’ll know I’ve been celebrating the beauty of unrefined sugars. Unrefined sugars have all the flavour locked in rather than refined out. As a baker, they are some new, exciting ingredients to add to our arsenal. It opens a whole new world of flavours! Last month, I hero’ed the Natura Sugars Soft Brown Sugar in these madeleines, and this time the demerara sugar is my go-to.
Semifreddo is probably the best way to make soft, scoopable ice cream at home (without an ice cream machine). It involves whipping eggs and sugar over a bowl of simmering water (bain marie) until very light and fluffy. Once cool, you fold in the whipped cream, freeze and that’s it! I’ve layered this one with my homemade Tennis biscuits which I am incredibly proud of, mostly because cracking the recipe took me a gazillion attempts and almost drove me mad! You are welcome, however, to use whichever biscuits you fancy, just make sure they fit the tin you’re going to set your semifreddo in!

400g homemade Tennis biscuits (or biscuits of your choice)
HAZELNUT PRALINE
100g Natura Sugars Demerara Sugar
100g hazelnuts, skinned and toasted
DEMERARA TOFFEE SAUCE
150g salted butter
150g Natura Sugars Demerara Sugar
150ml cream
Instructions
For the Semifreddo, line a 21cm x 9cm loaf tin with non-stick baking paper, leaving some overhanging - this will make it easier to unmould later.
Place the eggs, vanilla and Natura Sugars Demerara icing Sugar in a heatproof bowl over a saucepan of simmering water and, using a hand-held electric mixer, beat for 6–8 minutes or until thick and pale. Remove from heat and beat for a further 6–8 minutes or until cool.
Whisk the cream until soft peaks form.
Gently fold the cream through the egg mixture gently and thoroughly combined.
Pour a ¾ cup of the egg mixture into the prepared tin. Place an even layer of the biscuits over. then pour over another ¾ cup of the mix over and layer with biscuits Repeat with the remaining mix. Freeze the whole tin for 2 hours or until set.
To make the praline, line a baking tray with baking paper or a silicone mat and spread the hazelnuts over. Place the sugar in a saucepan over high heat and melt (without stirring) until caramelised and golden. Pour onto the hazelnuts and allow to cool completely. Break into shards.
To make the sauce, place the butter and sugar in a saucepan and place over a low heat. Simmer for 8 minutes until the sugar caramelizes and just starts smoking. Add the cream gradually while whisking. Allow to cool completely.
Unmould the semifreddo by briefly dipping the tin into hot water. Allow to stand for 5 minutes to soften, before topping with the hazelnut shards and serving with the sauce.
Notes
If you'd like to flavour the semifreddo, fold in flavourings such as spices, melted chocolate, lemon or orange zest or extracts with the cream.
Chocolate, coffee and toast? Sounds like a pretty normal breakfast for me! But because mornings are rushed and crazy why not have them all at once? Introducing Nutella’s caffeine-fueled (more delicious) cousin, spiked with coffee and coconut oil (no palm oil, thanks!) and toasty hazelnuts. And it’s as easy as chucking some things in a blender!
The best part about this recipe, is that you can tailor it to make whatever you like – use odourless coconut oil to make it more chocolatey, add more coffee if you like, swop out the nuts for almonds, macadamias, brazil nuts and switch up the honey by using maple syrup or agave. This spread can be as naughty or healthy as you want it to be – I prefer naughty, but that’s no surprise!

Homemade Mocha Hazelnut Spread
Makes 250ml
2/3 cup hazelnuts (or any other nut), roasted, skins removed
1 tsp good-quality instant coffee powder
¼ teaspoon sea salt
¼ cup The Kate Tin Cocoa Powder
½ cup coconut oil (regular or odourless – depending on the flavour you like)
½ cup honey (or maple syrup – if it’s pay-day)
½ tsp vanilla extract or essence
Soak the hazelnuts in water overnight, then drain and rinse well. In a blender, blitz the hazelnuts to form a paste then add the rest of the ingredients and blend until smooth, scraping down the sides regularly to make sure everything is incorporated. If the spread is too thick, add 1 tbsp hot water and blitz. Pour the mixture in a jar and store in the refrigerator for two weeks. Serve on toast or with a spoon!
TIP Remove hazelnut skins easily by placing the still-warm roasted nuts in a clean tea towel then bundle it up to form a sack and rub nuts together. The skins should come off easily!
Dark chocolate and hazelnuts have always been besties, and milk chocolate and hazelnuts have also been a power couple but white chocolate and hazelnuts? Why has the world been keeping them apart for so long! They are a match made in heaven. Especially when you stir them into these moist (I hate that word but there really aren’t many other options are there?), fudgey, caramelly blondies. I’ve never been much of a blondie fan, but apparently blondies really do have more fun – mainly because they’re packed with way more naughty ingredients that their brunette cousin. These innocent-looking squares are seriously seriously good – like one of the best things I’ve ever eaten good! Now go away and bake them already so I can have a blondie moment… 😉
White Chocolate Hazelnut Blondies
Makes 12
200g butter, chopped
200g The Kate Tin White Chocolate, broken into pieces
4 eggs, lightly beaten
200g almond meal
250g Natura soft brown sugar
1 tsp vanilla extract
100g hazelnuts, toasted and chopped
Preheat the oven to 180C (or 160C fan-forced) and line a 20cm square baking tray with baking paper. Melt the butter and chocolate together in a saucepan. Remove from the heat and add the vanilla and brown sugar and stir to combine. Set aside to cool slightly. Once cool, add the eggs, then the almond meal and hazelnuts and stir well to combine. Pour the brownie mix into the prepared tray and bake for 35 – 40 minutes or until the brownies are risen, golden brown in colour and firm to the touch.
Known as ‘Baci di dama’ in Italy, or ‘lady kisses’ these gluten-free little cookies are perfectly appropriate (with a little ginger added of course) seeing as though today is International Kiss a Ginger Day. Instead of going around kissing random (ginger/red-headed) strangers, I think perhaps giving them a ‘kiss’ ie. a small cute cookie which can be popped whole into the mouth, is a little more… proper. I know this, because I’ve had some awkward smooches from people today! (Okay, I enjoyed it, just a little bit!)
Traditionally these baci are made with toasted hazelnuts, but toasted almonds would be equally delicious! As would sandwiching them together with melted white chocolate, although the dark bitter kind paired with the ginger is heavenly! If you’re going all-out with the ginger, then double the spice. If you aren’t a ginger fan then simply leave it out. It’s such a versatile dough that you could add whichever flavourings you like – some orange zest, cocoa powder for a chocolate version or even a chai-spiced cookie would be delicious!

Chocolate Hazelnut Ginger Kisses or ‘Baci di Dama’
Makes 40
140g hazelnuts (or almonds), toasted and skinned
140g (1 cup) rice flour or corn starch
1 tsp ground ginger
100g butter, softened
100g sugar
pinch of salt
100g The Kate Tin Dark Baking Chocolate, chopped and melted
Preheat the oven to 160C. Grease and line two baking sheets. Place the nuts in a food process and process until the consistency of coarse breadcrumbs. Add the flour, spice, butter, sugar and salt and pulse until the mixture comes together to form a soft dough.Divide the dough into three pieces and roll each into 2cm thick logs then refrigerate until firm. Working with one piece of dough at a time, cut off small pieces of dough (about 5g each) then roll into little balls and place on the baking sheet. Bake for 10 – 15 minutes or until golden brown. Cool completely. Sandwich together with melted chocolate and allow to set.
