Ingredients
- 170g salted butter
- 125g The Kate Tin White Baking Chocolate
- 100g soft brown sugar
- 100g white sugar
- 2 large eggs, at room temperature
- 1 tsp vanilla extract
- 190g cake flour
- 1 tsp baking powder
- 100g marzipan, chopped finely or grated
- 100g flaked almonds, toasted
- 40g The Kate Tin Dark Baking Chocolate Chips
Instructions
- Preheat the oven to 175 degrees Celsius (155 degrees fan-forced).
- Grease and line a 20 x 20 cm baking tin.
- Place the butter and half of the white chocolate in a heatproof bowl.
- Microwave until the butter melts, then stir together until the chocolate melts fully. (You can also do
- this in a saucepan on the stovetop.)
- Let cool slightly, then add both sugars and whisk until well combined.
- Add the eggs, one at a time, whisking until both are fully incorporated. Mix in the vanilla.
- Add the flour, baking powder, and salt. Mix until the batter just comes together.
- Fold in the marzipan, almonds, remaining white chocolate, and dark chocolate.
- Bake for about 30 minutes, or until golden and set but still slightly soft in the middle to the touch.
